Rosemary-Grapefruit Cashews

The combination of rosemary, grapefruit and cashews may sound strange but it’s absolutely heavenly. I love to serve these in the summer next to gin and tonics. —Dana Swearengin, Forney, Texas


  • 2 tablespoons ruby red grapefruit juice
  • 2 tablespoons grated grapefruit zest
  • 1 tablespoon minced fresh rosemary
  • 2 cups lightly salted cashews


  1. Preheat oven to 350°. In a large bowl, stir together juice, zest and rosemary. Add cashews; stir to combine. Spread on a parchment-lined baking sheet. Bake until fragrant and nuts start to brown, 12-14 minutes. Cool on wire rack.
