Creamy Polenta

Serve this creamy polenta with roasted chicken or grilled pork instead of potatoes or rice. Dress up the polenta by topping it with sauteed mushrooms, onions and spinach. —Taste of Home Test Kitchen


  • 4 cups water
  • 3/4 teaspoon salt
  • 1 cup yellow cornmeal
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese, optional


  1. In a large heavy saucepan, bring water and salt to a boil.
  2. Reduce heat to a gentle boil; slowly whisk in cornmeal. Cook and stir with a wooden spoon for 15-20 minutes or until polenta is thickened and pulls away cleanly from the sides of the pan. Stir in butter until melted. If desired, stir in Parmesan cheese.
